Sloppy Joes were a go-to in my house growing up — they showed up on hectic weeknights when we needed something fast and filling, and I always loved the way they felt just a little rebellious to eat. Now, I make them when I want to lean into comfort, but with ingredients that pack a richer punch.
The base of this recipe is a deeply savory beef mixture, but the real upgrade comes from a quick tomato-balsamic jam that adds a smoky, tangy richness. A pinch of smoked paprika and a splash of Worcestershire sauce bring complexity, while toasted brioche brings buttery softness that balances the bold filling. If you want to go meatless, it’s amazing with lentils or finely chopped mushrooms.

Ingredients

For the Filling:
1 lb ground beef (or plant-based ground or finely chopped mushrooms)
1 small yellow onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1 tbsp tomato paste
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp ground cumin
Salt & black pepper to taste
For the Tomato-Balsamic Jam:
1 cup canned crushed tomatoes
1 tbsp tomato paste
2 tbsp balsamic vinegar
1 tbsp brown sugar
1 tsp Worcestershire sauce
Pinch of red pepper flakes (optional)
For Assembly:
4 brioche buns, halved and toasted
1 small shallot, thinly sliced
2 tbsp apple cider vinegar
1/2 tsp sugar
Arugula or shredded lettuce (optional)
Steps
Step 1
In a small bowl, combine the sliced shallot, apple cider vinegar, sugar, and a pinch of salt. Let it sit while you cook — it’ll quick-pickle and add zing later.
Step 2
Heat olive oil in a skillet over medium-high. Add the ground beef and cook until browned and crispy in spots, about 7–8 minutes. Break it into crumbles as it cooks, but let some bits get extra caramelized. Add onion and garlic, and cook 3–4 minutes more.
Step 3
Stir in the tomato paste, smoked paprika, chili powder, cumin, salt, and pepper. Cook another minute to bloom the spices.
Step 4
In a small saucepan, combine the crushed tomatoes, tomato paste, balsamic vinegar, brown sugar, Worcestershire sauce, and red pepper flakes. Simmer over low heat for about 10 minutes, stirring occasionally, until thick and jammy.
Step 5
Add the tomato-balsamic jam to the beef mixture and stir well to coat. Let it simmer together for 5 more minutes until rich and glossy. Taste and adjust seasoning.
Step 6
Toast your brioche buns. Spoon a generous heap of the sloppy joe filling onto the bottom half. Top with pickled shallots and a few arugula leaves if you like, then close it up with the top bun.
