Chicken Miso “Cup Noodles” with Carrots, Peas & Corn

Chicken Cup Noodles were a total staple for me growing up. The salty broth, the soft noodles, those tiny carrot cubes and peas? Pure comfort. This version takes all those nostalgic notes and gives them a cozy, modern spin — with real miso, fresh veggies, and just enough richness to make it feel special (but still simple enough to throw together on a rainy day).

I kept the flavor familiar — it’s still got that salty, brothy warmth — but layered in miso paste, grated ginger, and sesame oil to make it feel deeper and more satisfying. Instead of freeze-dried peas and corn? We're using the frozen kind (shhh — it’s still easy, just way better), but you can also use fresh! You can keep it super simple, or take it next level with soft-boiled egg, chili oil, or shredded rotisserie chicken.


Ingredients

  • 4 oz ramen noodles (fresh or dry — ditch the flavor packet)

  • 2 cups low-sodium chicken broth

  • 1 tbsp white miso paste

  • 1 tsp soy sauce (or tamari)

  • 1/2 tsp sesame oil

  • 1 tsp freshly grated ginger

  • 1/2 cup frozen peas

  • 1/2 cup frozen corn

  • 1/3 cup sliced carrots (fresh or frozen)

  • Optional: shredded cooked chicken (like rotisserie), soft-boiled egg, chili oil, green onions


Steps

Step 1

In a small pot, bring the chicken broth to a simmer. Stir in miso paste, soy sauce, grated ginger, and sesame oil until fully dissolved.

Step 2

Add the diced carrots and simmer for 3–4 minutes until tender. Then add peas and corn, and cook for another 2 minutes.

Step 3

Drop in the ramen noodles and cook according to package instructions (usually 2–4 minutes), just until tender.

Step 4

Stir in shredded chicken if using. Taste and adjust seasoning — add more soy sauce or a splash of rice vinegar for extra zing if you like.

Step 5

Ladle into bowls and top with soft-boiled egg, chili oil, or sliced green onions for a little glow-up flair.
