Cozy Garden Vegetable Soup

This garden vegetable soup is my go-to reset button. Whether you're feeling under the weather or just need something gentle and grounding, this one delivers all the comfort without the heaviness. It’s full of vibrant veggies, simmered in a garlicky, herby broth that’s soothing and satisfying.
A light, brothy veggie soup that tastes incredibly fresh!
The best part? You can throw this together with whatever’s in your crisper drawer. I’ve made this with fresh, frozen, and even canned vegetables—anything goes. It’s super flexible, naturally vegan, and it reheats like a dream. If you’re up for it, a piece of crusty bread on the side makes it feel like a full-on meal.
The flavor really comes alive thanks to a little tomato paste and dried herbs, which give the broth depth without making it rich or overwhelming. And while I’ve included my favorite veggie combo below, you can absolutely swap in what you’ve got. It’s just good, clean, simple soup.

Ingredients
1 tbsp olive oil
1 yellow onion, diced
2 garlic cloves, minced
2 carrots, peeled and sliced
2 celery stalks, chopped
1 zucchini, chopped
1 cup green beans, chopped (fresh or frozen)
½ cup frozen corn
½ cup frozen peas
2 tbsp tomato paste
½ tsp dried thyme
½ tsp dried basil
½ tsp dried oregano
6 cups vegetable broth
Salt and pepper, to taste
1 tbsp lemon juice (optional, for brightness)
Fresh parsley, for garnish (optional)
Steps
Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add the diced onion and cook until soft, about 3–4 minutes.
Step 3
Stir in garlic, carrots, and celery. Sauté for another 4–5 minutes.
Step 4
Add zucchini, green beans, corn, and peas. Stir everything together.
Step 5
Add tomato paste, thyme, basil, and oregano. Stir well to coat the veggies.
Step 6
Pour in the vegetable broth and bring the soup to a boil.
Step 7
Reduce heat to a gentle simmer. Cover and cook for 15–20 minutes, or until all veggies are tender.
Step 8
Taste and season with salt, pepper, and a splash of lemon juice if using.
Step 9
Ladle into bowls and garnish with fresh parsley if you’ve got it.
