Slow Cooker Tuscan Chicken with Sun-Dried Tomatoes & Spinach

This recipe is proof that rich, creamy comfort food doesn’t have to mean standing over a stove. Just toss everything into the slow cooker and let it work its magic — no chopping, no stress, just wildly good chicken in a velvety sauce that tastes like it came from a trattoria in Florence.

I’m not exaggerating when I say this one’s basically a cheat code. Boneless chicken breasts or thighs go into the slow cooker with a handful of pantry staples and sun-dried tomatoes (yes, the jarred kind!). A few hours later? You’re greeted with melt-in-your-mouth chicken swimming in a luscious sauce that practically begs for pasta or mashed potatoes.

And yes — there’s spinach in it, but don’t worry — we’re using frozen spinach, no chopping involved. It gets stirred in right at the end and wilts into the sauce like a dream. This is one of those meals that’s even better the next day, so it’s great for meal prep or leftovers.

Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs (or breasts)

  • 1 (8.5 oz) jar sun-dried tomatoes in oil (drain the oil, save a little for flavor!)

  • 1 cup chicken broth

  • 1 tsp garlic powder

  • 1 tsp dried Italian seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ cup cream cheese (or dairy-free alternative)

  • ¼ cup heavy cream or half & half (or coconut milk)

  • 1 cup frozen spinach


Steps

Step 1

Place chicken in the bottom of your slow cooker. Top with drained sun-dried tomatoes.

Step 2

Pour in chicken broth, garlic powder, Italian seasoning, salt, and pepper.

Step 3

Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender and cooked through.

Step 4

Add cream cheese and heavy cream. Stir gently until smooth and combined (you can shred the chicken a bit if you like).

Step 5

Stir in frozen spinach. Cover and cook on high for 15 more minutes, until spinach is wilted and sauce is creamy.

Step 6

Serve hot over pasta, rice, mashed potatoes, or with crusty bread.

    Use dairy-free cream cheese and coconut milk for a rich, creamy texture without dairy.

  • 🍗 Use bone-in chicken
    You can totally use bone-in thighs — just remove the bones when shredding the meat at the end.

  • 🍝 Add pasta directly
    Stir in cooked pasta before serving to make it a one-dish meal.

  • 🌶️ Add a kick
    Toss in a pinch of red pepper flakes or a spoonful of Calabrian chili paste for spicy Tuscan vibes.
