Roasted Brussels Sprouts and Butternut Squash Salad

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved

  • 1 small butternut squash, peeled, seeded, and diced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Maple Dijon Vinaigrette:

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon Dijon mustard

  • 2 tablespoons pure maple syrup

  • Salt and pepper to taste

Optional Toppings:

  • 1/2 cup dried cranberries

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped pecans, toasted


Steps

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large bowl, toss the halved Brussels sprouts and diced butternut squash with 2 tablespoons of olive oil. Season with salt and pepper.

Step 3

Spread the vegetables on a baking sheet in a single layer.

Step 4

Roast in the preheated oven for 25-30 minutes or until the Brussels sprouts are crispy and the butternut squash is tender, stirring halfway through.

Step 5

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and maple syrup until well combined. Season with salt and pepper.

Step 6

Transfer the roasted Brussels sprouts and butternut squash to a serving platter.

Step 7

Drizzle the maple Dijon vinaigrette over the vegetables and toss to coat evenly.

Step 8

If desired, sprinkle dried cranberries, crumbled feta cheese, and toasted chopped pecans on top.
