When I’m not feeling 100%, this soup is the first thing I turn to. It’s easy to make, full of cozy flavors, and honestly just makes me feel better with every bite. The broth is rich but not heavy, and those egg noodles soak up all the goodness. I love adding a squeeze of lemon and a sprinkle of herbs at the end for that little spark of freshness.

Ingredients

  • 2 tbsp olive oil or butter

  • 1 small yellow onion, diced

  • 2 garlic cloves, minced

  • 3 medium carrots, sliced into thin coins

  • 2 celery stalks, sliced

  • ½ tsp dried thyme

  • ½ tsp dried oregano

  • 6 cups chicken broth (low-sodium preferred)

  • 2 cups shredded cooked chicken (rotisserie is great!)

  • 2 cups egg noodles (or any small pasta)

  • Salt and pepper, to taste

  • 2 tbsp fresh parsley, chopped (optional but recommended)

  • Juice of ½ lemon (optional, for brightness)


Steps

Step 1

In a large pot or Dutch oven, heat olive oil or butter over medium heat.

Step 2

Add the diced onion and cook until soft and translucent, about 3–4 minutes.

Step 3

Stir in the garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally.

Step 4

Sprinkle in the thyme and oregano, and stir for 30 seconds until fragrant.

Step 5

Pour in the chicken broth and bring everything to a gentle boil.

Step 6

Once boiling, add the noodles and cook according to package instructions (usually about 8–10 minutes).

Step 7

Stir in the cooked chicken and let everything simmer for another 2–3 minutes until heated through.

Step 8

Taste and season with salt and pepper as needed. Stir in lemon juice and fresh parsley if using.

Step 9

Ladle into bowls and serve hot—with something cozy nearby.
