Ingredients

๐Ÿฝ๏ธ Servings: 8 โ€ข ๐Ÿ”ฅ Calories/Serving: 150

  • 1 lb fresh shrimp, peeled, deveined, and chopped

  • 1/2 cup fresh lime juice

  • 1/4 cup fresh lemon juice

  • 1/2 red onion, finely chopped

  • 1 cup diced tomatoes

  • 1 jalapeรฑo, seeded and minced

  • 1/4 cup chopped fresh cilantro

  • Salt and pepper to taste

  • 8 small tortilla cups (tostitos scoops)

  • Avocado slices and cilantro for garnish

Steps

Step 1

Combine shrimp, lime juice, and lemon juice in a bowl. Cover and refrigerate for about 2 hours, allowing the shrimp to "cook" in the acidity.

Step 2

Once shrimp is opaque and cooked through, drain and discard the marinade.

Step 3

Mix in red onion, diced tomatoes, jalapeรฑo, and chopped cilantro. Season with salt and pepper.

Step 4

Spoon the ceviche into each tortilla cup.

Step 5

Garnish each cup with a slice of avocado and a sprig of cilantro before serving.

Make it your own!

  • Include diced mango for a sweet contrast to the spicy jalapeรฑo.

  • Increase the amount of jalapeรฑo, or add a sprinkle of red chili flakes for extra heat.

  • Substitute cilantro with diced fresh mint or basil for a different herbal note.
