Cilantro Lime Rice

This copycat cilantro lime rice tastes just like Chipotle's—maybe even better. It's fluffy, fresh, zippy, and goes with everything from burrito bowls to salmon to grilled veggies. If you're building a flavor-packed meal at home, this rice is your not-so-secret weapon.

The trick to nailing this rice is using the right rice and giving it time to steam properly. I love using jasmine or basmati rice for extra aroma and that just-right bite. Once it's cooked, all you do is toss it with a bit of oil, lime juice, and loads of fresh cilantro. I like to add a pinch of garlic powder and a touch of salt to really round things out. It’s so simple, but somehow it steals the show every single time.

This rice is amazing served warm or at room temp, and it's super meal-prep friendly too. I usually make a double batch and keep it on hand for taco nights, curry nights, or even breakfast burritos. It’s bright, it’s fresh, and honestly? It’s a little addictive.

Ingredients

  • 1 cup jasmine or basmati rice

  • 1 ½ cups water

  • ½ tsp salt

  • 1 tbsp neutral oil or melted butter

  • 2 tbsp fresh lime juice (about 1 lime)

  • 1 tsp lime zest (optional, but great)

  • 2 tbsp chopped fresh cilantro

  • ¼ tsp garlic powder


Steps

Step 1

Rinse rice in cold water until the water runs mostly clear.

Step 2

Add rice, water, and salt to a medium saucepan. Bring to a boil, then reduce to low, cover, and simmer for 15 minutes.

Step 3

Remove from heat and let sit, covered, for 5 minutes to steam.

Step 4

Fluff rice with a fork. Stir in oil or butter, lime juice, lime zest, garlic powder, and chopped cilantro.

Step 5

Taste and adjust seasoning—add more lime or salt if needed.
