I wanted something that felt festive without needing to bake a whole cake or spend hours prepping. These strawberry shortcake pancakes totally fit the bill. They look fancy, but they’re low-key enough that even little helpers can get involved!

You could easily swap out the strawberries for Mom’s favorite fruit or even add a flavored whipped cream if you want to level it up. I kept it classic because strawberries feel so springy and fresh. Plus, if you use good berries, you barely need to sweeten them at all. Just slice them up, sprinkle with a little sugar, and let them get all syrupy and delicious.

Ingredients

  • 1 1/2 cups all-purpose flour

  • 2 tablespoons sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 1/4 cups milk

  • 1 egg

  • 3 tablespoons melted butter (plus extra for the pan)

  • 1 teaspoon vanilla extract

  • 1 1/2 cups sliced fresh strawberries

  • 2 tablespoons sugar (for strawberries)

  • 1 cup whipped cream or whipped topping

  • Maple syrup, for serving


Steps

Step 1

In a small bowl, toss the sliced strawberries with 2 tablespoons sugar. Set aside to macerate.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

In another bowl, whisk the milk, egg, melted butter, and vanilla until combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are fine!

Step 5

Heat a non-stick pan or griddle over medium heat and lightly butter it.

Step 6

Pour about 1/4 cup batter for each pancake. Cook until bubbles form on the surface, then flip and cook another 1-2 minutes.

Step 7

Stack pancakes with a layer of whipped cream and strawberries between each.

Step 8

Top the final stack with extra whipped cream, strawberries, and a drizzle of maple syrup.
