Ingredients

1½ cups orzo pasta
1½ cups frozen peas, thawed
1 cup cucumber, diced
½ cup feta cheese, crumbled
¼ cup red onion, finely diced
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
For the Dressing:
¼ cup olive oil
2 tbsp lemon juice
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp salt
¼ tsp black pepper
Steps
Step 1
Cook the Orzo
Bring a pot of salted water to a boil and cook orzo according to package instructions (about 8-10 minutes).
Drain, rinse under cold water, and set aside.
Step 2
Make the Dressing
In a small jar or bowl, whisk together olive oil, lemon juice, vinegar, Dijon mustard, garlic, salt, and pepper until well combined.
Step 3
Assemble the Salad
