Spiced Chickpea & Sweet Potato Stew

⏱️ Prep Time: 15 minutes • 🍳 Cook Time: 30 minutes

This cozy, one-pot stew is hearty, aromatic, and packed with plant-based protein. The combo of sweet potatoes and chickpeas is magic, especially when simmered with warm spices and a splash of coconut milk. It’s one of those meals that feels like a hug in a bowl.

A warm bowl of sweet potato and chickpea stew, topped with fresh cilantro and a squeeze of lime.

Sweet potatoes are my comfort food go-to, especially when I want something filling but not too heavy. This stew came about on a rainy night when I had random pantry staples to work with—and it’s been a favorite ever since. What makes it special is the subtle heat from the cumin and chili flakes paired with creamy coconut milk.

Another bonus? It reheats like a dream, making it perfect for meal prep or cozy leftovers. I love serving it with warm flatbread or over fluffy rice. And if you’re into texture, toss on some roasted pumpkin seeds for crunch—it’s chef’s kiss.

Whether you're feeding a crowd or just want something simple and nourishing, this recipe delivers all the comfort without the fuss. Plus, it's naturally vegan!
