Ingredients

1 tablespoon olive oil
1 small yellow onion, diced
3 garlic cloves, minced
1-inch piece of ginger, grated
1 teaspoon ground cumin
½ teaspoon smoked paprika
¼ teaspoon red pepper flakes (optional)
1 large sweet potato, peeled and cubed
1 can (15 oz) chickpeas, drained and rinsed
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
2 cups vegetable broth
Salt and pepper to taste
Juice of ½ lime
Fresh cilantro, for garnish
Steps
Step 1
Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 5 minutes.
Step 2
Stir in garlic, ginger, cumin, paprika, and red pepper flakes. Cook for 1 minute until fragrant.
Step 3
Add sweet potatoes, chickpeas, diced tomatoes, coconut milk, and vegetable broth. Stir well and bring to a simmer.
Step 4
Reduce heat, cover, and let simmer for 20–25 minutes, until sweet potatoes are tender.
Step 5
Season with salt, pepper, and lime juice. Ladle into bowls, garnish with cilantro, and serve hot.
