For the cauliflower:

For the lime slaw:
2 cups shredded cabbage (green or purple)
1 small carrot, grated
2 tablespoons chopped cilantro
Juice of 1 lime
1 tablespoon olive oil

For assembly:
8 small corn or flour tortillas
1 avocado, sliced

Steps
Step 1
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Step 2
In a large bowl, toss cauliflower with olive oil and all the spices. Spread evenly on the baking sheet.
Step 3
Roast for 25–30 minutes, flipping halfway, until golden and crispy on the edges.
Step 4
Meanwhile, toss cabbage, carrot, cilantro, lime juice, olive oil, and salt in a bowl. Let sit while cauliflower finishes roasting.
Step 5
Warm tortillas and fill with roasted cauliflower, lime slaw, avocado, and your fave toppings.
