    • 2 tbsp olive oil

    • 1 onion, thinly sliced

    • 3 cups sliced mushrooms (any variety)

    • 2 cups fresh spinach

    • 1 garlic clove, minced

    • 1/2 cup ricotta cheese

    • 1/4 cup grated Parmesan cheese

    • Salt and pepper to taste

    • 1 egg, beaten (for egg wash)


Steps

Step 1

Start by making the crust: In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the dough comes together. Wrap in plastic and chill for at least 30 minutes.

Step 2

Preheat the oven to 375ยฐF (190ยฐC).

Step 3

For the filling, heat olive oil in a pan over medium heat. Sautรฉ onion until translucent, then add mushrooms and cook until they release their moisture and brown slightly. Add garlic and spinach, cooking until spinach is wilted. Season with salt and pepper, then set aside to cool slightly.
