Cozy Winter Beef Stew

Imagine a snowy evening, the fireplace crackling, and a pot of savory stew simmering on the stove. This Cozy Winter Beef Stew is the culinary embodiment of a warm hug, featuring tender beef chunks, hearty vegetables, and a rich, flavorful broth. It's a recipe passed down through generations, with a little twist to make it my own.


Ingredients

  • 2 lbs beef chuck, cut into cubes

  • 2 tablespoons olive oil

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 3 carrots, peeled and sliced

  • 3 potatoes, peeled and cubed

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon thyme

  • 1 teaspoon rosemary

  • Salt and pepper to taste

  • 2 tablespoons tomato paste

  • 2 tablespoons flour


Steps

Step 1

Heat olive oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Remove beef and set aside.

Step 2

In the same pot, add onion and garlic. Sautรฉ until soft.

Step 3

Stir in tomato paste, flour, thyme, and rosemary. Cook for 1-2 minutes.

Step 4

Gradually add beef broth and red wine, scraping up any bits from the bottom of the pot.

Step 5

Return beef to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.

Step 6

Add carrots and potatoes. Cover and simmer for another 30 minutes, or until vegetables are tender.

Step 7

Season with salt and pepper to taste. Serve hot.


Make it your own!

  • Add a dash of Worcestershire sauce for extra depth of flavor.

  • Mix in some mushrooms for an earthy touch.

  • For a thicker stew, mix in an additional tablespoon of flour mixed with water.
