Ingredients

For the Rosemary Beef Tips:

  • 1½ lbs sirloin or stew beef, cut into 1-inch cubes

  • 1½ tbsp fresh rosemary, finely chopped (or 1½ tsp dried)

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Salt & pepper, to taste

  • 1 tbsp butter (for finishing)

For the Lemon Butter Peas & Potatoes:

  • 1 lb baby potatoes, halved

  • 1½ cups frozen peas

  • 1 tbsp butter

  • Zest of 1 lemon

  • Juice of ½ lemon

  • Salt & pepper, to taste

  • Optional: fresh parsley or mint, for garnish


Steps

Step 1

Boil or steam baby potatoes until fork-tender, about 10–12 minutes. Drain and set aside.

Step 2

In a bowl, toss beef tips with rosemary, garlic, olive oil, balsamic, salt, and pepper. Let sit for 10–15 minutes while potatoes cook.

Step 3

Heat a large skillet over medium-high heat. Sear beef tips in a single layer (in batches if needed) for 2–3 minutes per side until browned. Lower heat, add 1 tbsp butter, and let it melt into the beef. Set aside, loosely covered.

Step 4

In the same skillet or a small saucepan, melt 1 tbsp butter over medium heat. Add peas and cooked potatoes. Stir gently until warmed through.

Step 5

Add lemon zest and juice to the peas and potatoes. Season to taste with salt and pepper. Serve warm with beef tips on top or to the side.
