One-Pan Balsamic Glazed Pork Chops with Baby Potatoes

This is one of those “how is this so good with so little effort?” meals. You toss everything on one sheet pan, let it roast, and 30 minutes later you’ve got juicy pork chops with crispy-edged potatoes and a tangy-sweet balsamic glaze that brings it all together. No chopping. No marinating. No standing over the stove.

I love this recipe for nights when I want something satisfying and savory but absolutely do not want to peel garlic or chop a single veggie. Baby potatoes are the lazy hero here — no need to cut them if they’re small, and they get deliciously crispy in the oven. The balsamic glaze thickens as it bakes, giving the pork chops that perfect sticky edge without being too sweet.

You can totally serve this as-is, or round it out with a simple green salad or a side of microwave-steamed frozen veggies. But honestly? It doesn’t even need it.

Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • 1 lb baby potatoes (leave whole if small)

  • 2 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • 1 tsp garlic powder

  • 1 tsp dried rosemary or thyme

  • 1 tsp salt

  • ½ tsp black pepper


Steps

Step 1

Preheat oven to 425°F (220°C) and line a large sheet pan with parchment or foil.

Step 2

Place pork chops on one side of the sheet pan. Add baby potatoes to the other side.

Step 3

In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon, garlic powder, rosemary, salt, and pepper.

Step 4

Spoon half the glaze over the pork chops and the rest over the potatoes. Toss the potatoes gently to coat.

Step 5

Roast for 25–30 minutes, flipping the pork chops once halfway through, until meat is cooked through and potatoes are tender and golden.

Step 6

Let rest for 5 minutes before serving. Spoon any extra glaze from the pan over the pork chops.

    Stir in ½ cup of frozen spinach or chopped frozen kale before baking.

    Add a few spoonfuls of ricotta before baking for creamy pockets of goodness.
