Ingredients

For the Pancakes:
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons sugar
1 cup ricotta cheese
3/4 cup milk
2 large eggs
Zest of 1 lemon
2 tablespoons lemon juice
1 teaspoon vanilla extract
For the Blueberry Syrup:
2 cups fresh blueberries
1/2 cup sugar
1/2 cup water
Juice of 1/2 lemon
Steps
Step 1
In a small saucepan, combine blueberries, sugar, and water. Bring to a simmer over medium heat.
Step 2
Cook for 10 minutes, mashing some of the berries to release their juices.
Step 3
Stir in lemon juice, simmer for another 5 minutes, then remove from heat and set aside to cool.
Step 4
In a large bowl, whisk together flour, baking powder, salt, and sugar.

In another bowl, mix ricotta cheese, milk, eggs, lemon zest, lemon juice, and vanilla extract.

Fold the wet ingredients into the dry ingredients until just combined.

Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.

Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
