Sheet Pan Kielbasa with Peppers, Onions & Pierogi

This dish brings alllll the Eastern European comfort vibes — smoky kielbasa, sweet roasted peppers and onions (from frozen, no chopping!), and pillowy pierogi that crisp up in the oven. It’s warm, filling, and a total potato glow-up if you’re tired of the same old roasted spuds.

Pierogi are the sleeper MVP here — you just toss them straight on the pan from frozen, drizzle everything with olive oil and seasoning, and roast. No boiling, no fuss. They get crispy around the edges and stay soft inside, and they soak up all that flavor from the sausage and veggies. I recommend using the classic potato & cheese ones, but any flavor works.

This combo is nostalgic, cozy, and crazy easy. And it’s fun enough to feel like comfort food without being another boring sheet pan lineup.

Ingredients

  • 12 oz kielbasa, sliced into rounds

  • 1 (16 oz) package frozen pierogi (potato & cheese recommended)

  • 2 cups frozen pepper and onion blend

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: sour cream, chopped parsley, or Dijon for serving


Steps

Step 1

Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.

Step 2

Spread frozen pierogi, sliced kielbasa, and frozen peppers & onions on the pan.

Step 3

Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss everything gently to coat and spread into an even layer.

Step 4

Roast for 25–28 minutes, flipping pierogi halfway through, until everything is golden and crispy at the edges.

Step 5

Serve hot with a side of sour cream or mustard for dipping, if desired.


Make it your own!

  • 🧀 Add more cheese
    Sprinkle shredded cheddar or crumbled feta over the top for a melty or tangy finish.

  • 🥬 Toss in greens
    Add a few handfuls of frozen spinach in the last 5 minutes of baking for a pop of color.

  • 🌶️ Give it heat
    Add hot cherry peppers or drizzle with chili oil before serving for a spicy twist.
