Ingredients

🍽️ Servings: 12 crostini • 🔥 Calories/Serving: 80 per crostini

  • 1 baguette, sliced into 12 pieces

  • 1 large red bell pepper, roasted, peeled, and sliced

  • 4 ounces goat cheese

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon balsamic glaze

  • Fresh basil leaves, for garnish

  • Salt and pepper to taste

Steps

Step 1

Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet, and lightly brush them with olive oil. Bake in the preheated oven for about 10 minutes or until the slices turn golden and crispy. Set them aside.

Step 2

In a small bowl, mix the goat cheese with a pinch of salt and pepper until smooth and creamy.

Step 3

To roast the red pepper, place it directly on a gas stove flame or on a grill. Alternatively, you can broil it in the oven, turning occasionally, until the skin is charred and blistered. Transfer the roasted pepper to a bowl, cover with plastic wrap, and let it sit for a few minutes. Once cooled, peel off the skin and remove the seeds. Slice the roasted red pepper into thin strips.

Step 4

Spread a generous layer of goat cheese on each toasted baguette slice.

Step 5

Top the goat cheese with a few strips of roasted red pepper on each crostini.

Step 6

Drizzle the balsamic glaze over the crostini for a touch of sweetness and tang.

Step 7

Garnish each crostini with fresh basil leaves to add a burst of flavor and a pop of color.

Make it your own!

  • Enhance the flavors with a hint of minced garlic added to the goat cheese spread.
