Ingredients

🍽️ Servings: 12 bars β€’ πŸ”₯ Calories/Serving: 220

  • 2 cups rolled oats

  • 1/2 cup peanut butter (creamy or chunky)

  • 1/4 cup honey

  • 1/2 cup chopped nuts (almonds or walnuts)

  • 1/2 cup chocolate chunks or chips

  • 1/4 cup dried cranberries or raisins

  • 1/4 cup pumpkin seeds

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • A pinch of salt

Steps

Step 1

Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, chopped nuts, chocolate chunks, dried cranberries, pumpkin seeds, cinnamon, and salt.

Step 3

In a microwave-safe bowl, mix peanut butter and honey. Microwave for 30 seconds, then stir until smooth. Add the vanilla extract.

Step 4

Pour the peanut butter mixture over the dry ingredients and mix until everything is well coated.

Step 5

Transfer the mixture to the prepared pan. Press down firmly with a spatula or the back of a spoon to compact the mixture.

Step 6

Chill in the refrigerator for at least 1 hour to set.

Step 7

Once set, lift the bars out of the pan using the parchment paper and cut them into 12 bars.

Make it your own!

  • Swap the peanut butter with almond or cashew butter for a different nutty flavor.

  • Add in a handful of mini marshmallows for a fun twist.

  • For extra crunch, stir in some rice crispies or chia seeds.
