1 bottle (12 oz) Guinness stout beer
4 cups beef broth
2 large carrots, peeled & chopped
2 large potatoes, peeled & diced
2 celery stalks, sliced
1 teaspoon dried thyme (or 1 tablespoon fresh)
2 bay leaves
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar (optional, for balance)
Fresh parsley, for garnish
Steps
Step 1
Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Toss the beef cubes with salt, pepper, and flour, then sear them in batches until browned on all sides. Remove and set aside.
