Ingredients

3 pounds Yukon Gold potatoes, thinly sliced
3 cups heavy cream
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
1 head of garlic, roasted and mashed
1 tablespoon fresh thyme leaves, plus extra for garnish
Salt and pepper, to taste
1/2 teaspoon paprika
Butter, for greasing the baking dish
Steps
Step 1
Preheat your oven to 375ยฐF (190ยฐC). Grease a 9x13 inch baking dish with butter.
Step 2
In a large saucepan, combine heavy cream, mashed roasted garlic, thyme, salt, and pepper. Bring to a simmer over medium heat.

Layer half of the potato slices in the prepared baking dish, overlapping slightly. Season with a bit more salt and pepper.
