Ingredients

🍽️ Servings: 2 (about 8 pancakes) β€’ πŸ”₯ Calories/Serving: 250

  • 2 ripe bananas

  • 1 cup rolled oats

  • 2 large eggs

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 teaspoon baking powder

  • Pinch of salt

  • 1/2 teaspoon vanilla extract

  • Coconut oil or cooking spray for the pan

  • Fresh fruit, maple syrup, or honey for serving

Steps

Step 1

In a blender or food processor, combine the ripe bananas, rolled oats, eggs, ground cinnamon, ground nutmeg, baking powder, salt, and vanilla extract.

Step 2

Blend the mixture until it becomes a smooth and thick pancake batter.

Step 3

Heat a non-stick skillet or griddle over medium heat. Add a small amount of coconut oil or cooking spray to lightly grease the surface.

Step 4

Pour about 1/4 cup of the pancake batter onto the skillet to form each pancake. You can make the pancakes as small or large as you like.

Step 5

Cook the pancakes for about 2-3 minutes on one side until bubbles form on the surface.

Step 6

Gently flip the pancakes and cook for an additional 2 minutes on the other side until they are golden brown and cooked through.

Step 7

Repeat the process with the remaining batter until all the pancakes are cooked.

Step 8

Serve the Banana Oat Pancakes warm, topped with fresh fruit, a drizzle of maple syrup, or a drizzle of honey for added sweetness.

Make it your own!

  • Add a handful of chopped nuts, such as walnuts or pecans, to the pancake batter for extra crunch and nutrition.

  • Stir in some dark chocolate chips or fresh blueberries into the pancake batter for a delightful twist.

  • For a vegan version, replace the eggs with flax eggs (mix 2 tablespoons ground flaxseed with 5 tablespoons water, let it sit for a few minutes to thicken).
