Ingredients

  • 4 boneless, skinless chicken thighs

  • 2 cups of steamed white rice

  • 1/4 cup soy sauce

  • 1/4 cup mirin

  • 2 tablespoons honey

  • 1 tablespoon grated ginger

  • 1 clove garlic, minced

  • 1 tablespoon cornstarch mixed with 2 tablespoons water

  • 2 green onions, thinly sliced

  • 1 carrot, julienned

  • 1/2 cup sliced mushrooms

  • Sesame seeds, for garnish

  • 1 tablespoon vegetable oil


Steps

Step 1

In a small bowl, combine soy sauce, mirin, honey, grated ginger, and minced garlic to create the teriyaki sauce.

Step 2

Cut chicken thighs into bite-sized pieces.

Step 3

Heat vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned.

Step 4

Pour the teriyaki sauce over the chicken and bring to a simmer.

Step 5

Add the cornstarch mixture to the skillet, stirring continuously until the sauce thickens.

Step 6

In a separate pan, lightly sauté the mushrooms and carrot until tender.

Step 7

Divide the steamed rice into four bowls. Top each bowl with the teriyaki chicken, sautéed vegetables, and green onions.

Step 8

Garnish with sesame seeds.
