Ingredients

🍽️ Servings: 4 β€’ πŸ”₯ Calories/Serving: 250

  • 4 medium-sized apples, peeled, cored, and diced

  • 2 tablespoons brown sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1 cup old-fashioned oats

  • 1/2 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1/4 cup unsalted butter, cold and diced

  • 1/4 cup chopped pecans or walnuts (optional)

  • 1 cup Greek yogurt or non-dairy alternative

  • 1 teaspoon vanilla extract

Steps

Step 1

In a saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, nutmeg, and cloves. Cook, stirring occasionally, for about 8-10 minutes or until the apples are tender and coated in the spiced mixture. Set aside to cool.

Step 2

In a separate bowl, prepare the crumble topping. Mix the oats, flour, granulated sugar, and cold diced butter. Use your fingers or a fork to blend until the mixture resembles coarse crumbs. Stir in the chopped nuts if using.

Step 3

Preheat the oven to 350Β°F (175Β°C). Spread the crumble mixture on a baking sheet and bake for about 12-15 minutes or until golden and crisp. Let it cool.

Step 4

In a small bowl, mix the Greek yogurt with vanilla extract to make the yogurt layer.

Step 5

Now, let's assemble the parfaits. Start with a layer of the spiced apples, followed by a layer of the crumble topping, and a dollop of the yogurt mixture. Repeat the layers once more, ending with a final sprinkle of the crumble on top.

Make it your own!

  • Add a drizzle of caramel sauce between the layers for an extra indulgent touch.

  • For a more decadent version, consider swapping the yogurt for vanilla ice cream.

  • Experiment with different types of apples or pears for varying levels of sweetness and texture.
