  • 1 medium butternut squash, peeled, seeded, and cut into cubes

  • 3 tablespoons pure maple syrup

  • 2 tablespoons olive oil

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1 cup chopped pecans

  • 1 tablespoon unsalted butter, melted

  • 2 tablespoons brown sugar

  • 1 teaspoon vanilla extract


Steps

Step 1

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, combine the butternut squash cubes, maple syrup, olive oil, cinnamon, nutmeg, and salt. Toss until the squash is evenly coated with the mixture.

Spread the coated squash on a baking sheet in a single layer. Roast for about 25-30 minutes, or until the squash is tender and caramelized around the edges. Stir halfway through the roasting time.
