Ingredients

1 medium butternut squash, peeled, seeded, and cut into cubes
3 tablespoons pure maple syrup
2 tablespoons olive oil
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup chopped pecans
1 tablespoon unsalted butter, melted
2 tablespoons brown sugar
1 teaspoon vanilla extract
Steps
Step 1
Preheat the oven to 375Β°F (190Β°C).
Step 2
In a large bowl, combine the butternut squash cubes, maple syrup, olive oil, cinnamon, nutmeg, and salt. Toss until the squash is evenly coated with the mixture.
Step 3
Spread the coated squash on a baking sheet in a single layer. Roast for about 25-30 minutes, or until the squash is tender and caramelized around the edges. Stir halfway through the roasting time.
Step 4
While the squash is roasting, prepare the pecan topping. In a bowl, mix the chopped pecans, melted butter, brown sugar, and vanilla extract. Spread the mixture on a separate baking sheet.
Step 5
After removing the squash from the oven, increase the oven temperature to 400Β°F (200Β°C). Place the pecan mixture in the oven and toast for about 5-7 minutes, until the pecans are fragrant and golden. Keep an eye on them to prevent burning.
Step 6
Once the squash and pecans are ready, gently fold the toasted pecans into the roasted butternut squash.
