This is one of those dinners I reach for when I want something that feels a little elevated but doesn’t take a lot of effort. The salmon roasts beautifully in the oven with a simple mix of herbs, lemon zest, and garlic—and while that’s cooking, I just quickly sauté the green beans with garlic and a touch of red pepper flakes. It’s simple, satisfying, and always hits the spot.

Sometimes you just want a meal that feels like it came from a nice restaurant without having to actually go to one. This salmon dish does exactly that. I love how the fresh herbs, lemon zest, and olive oil create a crust of flavor on the salmon while it roasts in the oven. It’s one of those things that looks fancy, but takes less than 30 minutes start to finish.
The garlic green beans are a favorite on their own—I make them even when I’m not making salmon. They’re garlicky, just a little spicy (if you want them to be), and still bright and crisp. Together, it’s a full meal that’s healthy without being too precious, and comforting without being heavy.
You can definitely double this if you’re feeding a group, or just want leftovers for lunch the next day. The salmon also works really well flaked into a salad or bowl situation if that’s more your speed.

For the Baked Herb-Roasted Salmon:
4 salmon fillets (about 6 oz each)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp chopped fresh thyme
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh parsley
Zest of 1 lemon
Salt and pepper to taste
For the Garlic Green Beans:
1 lb fresh green beans, trimmed
2 tbsp olive oil
4 cloves garlic, minced
¼ tsp red pepper flakes (optional)

Steps
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Step 2
Place salmon fillets skin-side down on the baking sheet. In a small bowl, mix olive oil, garlic, thyme, rosemary, parsley, lemon zest, salt, and pepper.
Step 3
Rub the herb mixture evenly over the tops of the salmon fillets. Bake for 12–15 minutes, or until salmon flakes easily with a fork.
Step 4
Add green beans and toss to coat. Sauté for 6–8 minutes, until just tender and slightly blistered. Add red pepper flakes (if using), and season with salt and pepper to taste.
Step 5
Serve the roasted salmon with a side of garlicky green beans and lemon wedges if desired.
