Pumpkin Spice Cookies:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar, packed

  • 1 large egg

  • 1 cup canned pumpkin puree

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground cloves

Cream Cheese Frosting:

  • 4 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

Steps

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.

Step 3

Add the egg to the butter and sugar mixture, beating well.

Step 4

Mix in the canned pumpkin puree until well combined.

Step 5

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms.

Step 7

Drop tablespoon-sized portions of cookie dough onto the prepared baking sheet, leaving space between each cookie.

Step 8

Bake in the preheated oven for approximately 10-12 minutes or until the edges are set and the centers are slightly soft.

Step 9

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 10

In a mixing bowl, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

Step 11

Once the cookies are completely cooled, spread a generous dollop of cream cheese frosting on each cookie.

Make it your own!

  • Add a sprinkle of chopped nuts, such as pecans or walnuts, to the frosting for extra crunch.

  • Dust the frosted cookies with a pinch of ground cinnamon or brown sugar for a decorative touch.

  • Experiment with a drizzle of caramel sauce over the frosting for a caramel pumpkin twist.
