Ingredients

🍽️ Servings: 6

  • 4 large sweet potatoes, peeled and cubed

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1/2 cup heavy cream

Maple Pecan Drizzle:

  • 1/2 cup pure maple syrup

  • 1/2 cup chopped pecans

  • 2 tablespoons unsalted butter

Steps

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.

Step 3

Spread the sweet potatoes on a baking sheet in a single layer. Roast in the preheated oven for 40-45 minutes or until the sweet potatoes are tender and slightly caramelized.

Step 4

Transfer the roasted sweet potatoes to a large bowl. Mash the sweet potatoes using a potato masher or fork until smooth and creamy.

Step 5

Gradually add the heavy cream, mixing well until the desired creamy consistency is achieved.

Step 6

In a small saucepan, combine maple syrup, chopped pecans, and butter. Cook over medium heat, stirring frequently, until the mixture thickens slightly, about 5 minutes.

Step 7

Drizzle the maple pecan drizzle over the potatoes and top with chopped pecans. Serve hot.

Make it your own!

  • Enhance the flavor with a pinch of ground cinnamon or nutmeg in the mashed sweet potatoes.

  • Experiment with different nuts in the drizzle, such as walnuts or almonds.

  • For a savory twist, sprinkle crumbled feta or goat cheese over the mashed sweet potatoes.
